Christmas Cookie Recipe Swap
This year Christmas Cookie Recipe Swap will be a lot of fun. It entails making the cookies, taking a picture, sending the recipe and emailing them to me. Then each day I will post one of the recipes. I just love this time of the year and enjoy baking for my family and friends!!
I have opened of the recipe swap today December 6th and will close December 15th. This will give everyone time to bake and send me their recipes.
I will also do a pdf for anyone interested in all of the Christmas Cookie Recipes. Just sign up and let the fun begin!

Christmas Cookie Recipe Swap
Hello Everyone, it is time for my annual Christmas Cookie Recipe Swap. I have had so much fun with this every year and this year is no except. House is decorated, supplies are assembled and I am ready to bake. How about you? Want to join?

Gingerbread Men
It is that time of the year again, Christmas Cookies. Although over the last several years I don't bake and cook like I use to, I still like to some cookies. Today I made Ginger Bread cookies with the help of my son. I mixed and made the dough and we cut them out and decorated. So how is that for team work. We had fun and that is all that matters. Here is a picture and my recipe. Enjoy and I hope you make some cookie memories of your own.
3 cups flour
2 tsp. ground Ginger
1 tsp. ground Cinnamon
1 tsp. baking soda
1/4 tsp. ground nutmeg
1/4 tsp. salt
3/4 cup (11/2 sticks) butter, softened
3/4 cup firmly packed brown sugar
1/2 cup molasses
1 egg
1tsp. pure vanilla extract
Ingredients
3 cups flour
2 tsp. ground Ginger
1 tsp. ground Cinnamon
1 tsp. baking soda
1/4 tsp. ground nutmeg
1/4 tsp. salt
3/4 cup (11/2 sticks) butter, softened
3/4 cup firmly packed brown sugar
1/2 cup molasses
1 egg
1tsp. pure vanilla extract
Mix first 6 ingredients; set aside. Beat butter and sugar
in large bowl with electric mixer on medium speed until light and fluffy. Add
molasses, egg and vanilla mix well.
Gradually beat in
flour mixture on low speed until well
mixed. Divide dough into2 flat discs and
wrap in plastic wrap. Refrigerate 4 hours or overnight.
Roll out dough to 1/4 inch thickness on lightly
floured work surface. Cut into
gingerbread men shapes with a 5 in cookie cutter. Place 1 inch apart on ungreased baking
sheets.
Bake in preheated 350 degree oven for 8-10 minutes
or until edges of cookies just begin to brown. Cool on baking sheets 2 minutes.
Remove to wire racks and cool completely. Decorate cookies as desired. With
either white icing or sprinkles.
Store cookies in
tight container up to 5 days.
Makes 2 dozen.

Christmas Swap Cookies
I am so excited that my partner in the cookie swap was Lisa Eisner. I sent her my Kris Kringle recipe and she sent me her Linzer cookie recipe. I had a lot of fun making these and learned a new cookie recipe for Christmas. My son just loved them.

Christmas Update on Christmas Cookie Recipe Swap

Friday's TIp of the Day: It's Christmas Cookie TIme
I thought I would share with you some of my favorite Christmas Cookies that my family has loved over the next few days.
This recipe was given to me by my son's Grandmother Pat, a very nice Italian lady who liked to bake at Christmas. I have tried to bake these every year after she passed away to keep up the family tradion.
Today's is Pumpkin Cookies!
Bake: 350 degrees
Time: 10 minutes
Yield: 3-4 dozen
Ingredients:
2 cups sugar
2 sticks unsalted butter
2 eggs room temperature
2 tablespoons milk (I use fat free)
2 15oz cans 100% pumpkin not pumpkin pie mix
4 cups flour
1 cup walnuts (chopped finely)
4 tablespoons baking powder
2 tablespoons baking soda
Pinch of Salt
2 teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon ground cloves
2 teaspoons vanilla
Directions for Cookies

- In large bowl cream sugar and butter until smooth.
- In another bowl blend eggs, milk, and vanilla together then gradually add sugar mixture.
- Mix flour, soda, baking powder, spices and nuts together until blended then gradually add to cream mixture.
- Add in pumpkin to creamed mixture and blend until fluffy. Then drop onto ungreased cookie sheet. I use a teaspoon for small cookies and a large spoon for larger cookies. These will spread a little so leave about 2 inches between them.
Ingredients for Frosting:
1 teaspoon salt
1 stick butter
4 cups powdered sugar
8-10 tablespoons milk
1 teaspoon vanilla
1 8oz package cream cheese (room temperature)
Directions for Frosting
- Mix all ingredients until creamy, frosting should be thick.
- Frost cookies after they have cooled all the way or the frosting will run.
- You can serve right away or layer in containers and freeze until you are ready to serve.
