Christmas Cookies Recipe Swap Results

I am sorry that it has taken me this long to post the recipes from my Christmas Swap. Lisa and I was the only one who actually swap recipes this year. So I hope you enjoy what we made.

Holiday Spiced Oatmeal Cookies

 

You will just love these cookies that are chocked full of oats, pecans and dried cherries they are just perfect for the Holidays.

 

Ingredients

2 cups flour

1 tablespoon of ground cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

1 cup ( 2 sticks) butter, softened

1 cup firmly paced light brown sugar

1 cup granulated sugar

2 eggs

1 teaspoon pure vanilla

2 cups quick-cooking oats

1 cup chopped pecans

1 cup dried cherries, cranberries or raisins

 

Directions

1. Preheat oven to 350 degrees.  This recipe makes about 6 dozen cookies.  
2. Mix flour, cinnamon, baking soda and salt in a medium bowl. Set aside.
3. Beat butter and sugar in a large bowl with an electric mixer on medium speed until light and fluffy. Add eggs( one at a time) and vanilla, mix well.
4. Gradually beat in flour mixture on low speed until well mixed. Stir in oats, pecans and dried cherries.
5. Drop cookie dough by rounded tablespoon onto ungreased baking sheets.
6. Bake 10-12 minutes  or until lightly browned. Cool on baking for 1 minute and move to wire racks; cool completely.

German Christmas Cookies

 1 tablespoon milk

1 teaspoon baking soda

2 sticks unsalted butter (softened)

1 cup sugar

1 egg

½ T pure vanilla extract

2 ½ cups flour

1/8 t salt

1. Place milk in a measuring cup and stir in baking soda.
2. Cream butter in medium bowl.  Add the sugar, egg, and vanilla. 
3.  Sift in the flour and salt.  Add the milk/baking soda mixture. 
4.  Cover and chill for several hours.
5. Line cookie sheets with baking/parchment paper.
6. Set oven to 350 (I use 340 on convection bake).
7. On a floured surface, roll dough and cut cookies.
8. Bake for 8 to 10 minutes

 

This batch will make 145 small cookies using small cut outs. If you use larger cookie cutter then less cookies. You can frost the cookies and decorate after cooling.

Christmas Cookie Recipe Swap

This year Christmas Cookie Recipe Swap will be a lot of fun. It entails making the cookies, taking a picture, sending the recipe and emailing them to me.  Then each day I will post one of the recipes. I just love this time of the year and enjoy baking for my family and friends!!

 

I have opened of the recipe swap today December 6th and will close December 15th. This will give everyone time to bake and send me their recipes.

Christmas Cookie Recipe Swap

Hello Everyone, it is time for my annual Christmas Cookie Recipe Swap. I have had so much fun with this every year and this year is no except. House is decorated, supplies are assembled and I am ready to bake. How about you? Want to join?

Gingerbread Men

It is that time of the year again, Christmas Cookies. Although over the last several years I don't bake and cook like I use to, I still like to some cookies. Today I made Ginger Bread cookies with the help of my son. I mixed and made the dough and we cut them out and decorated. So how is that for team work. We had fun and that is all that matters. Here is a picture and my recipe. Enjoy and I hope you make some cookie memories of your own.

 

 

 

Ingredients

3 cups  flour
2 tsp.  ground Ginger
1 tsp.   ground Cinnamon
1 tsp.   baking soda
1/4 tsp. ground nutmeg
1/4 tsp. salt
3/4 cup (11/2 sticks) butter, softened
3/4 cup firmly packed brown sugar
1/2 cup molasses
1 egg
1tsp. pure vanilla extract
 

Mix  first 6 ingredients; set aside. Beat  butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses, egg and vanilla mix well.

Gradually beat in flour mixture  on low speed until well mixed.  Divide dough into2 flat discs and wrap in plastic wrap. Refrigerate 4 hours or overnight.

Roll  out dough to 1/4 inch thickness on lightly floured work surface.  Cut into gingerbread men shapes with a 5 in cookie cutter.  Place 1 inch apart on ungreased baking sheets.

Bake  in preheated 350 degree oven for 8-10 minutes or until edges of cookies just begin to brown. Cool on baking sheets 2 minutes. Remove to wire racks and cool completely. Decorate cookies as desired. With either white icing or sprinkles.

Store cookies in tight container up to 5 days.

Makes 2 dozen.

Christmas Swap Cookies

I am so excited that my partner in the cookie swap was Lisa Eisner. I sent her my Kris Kringle recipe and she sent me her Linzer cookie recipe. I had a lot of fun making these and learned a new cookie recipe for Christmas. My son just loved them.
